As a participant in the annual Dish + Art feature in LUX LIFE magazine, Chef Gerard Jesse of Seafood Shack in Cortez created the Vesper Bounty. Inspired by the paintings of local artist and member of the Art Uptown artist collective Kasia Bruniany, the Vesper Bounty comprises fire-roasted Florida spiny lobster with Montpelier butter paired with local organic radishes, pureed sweet potato and broccoli florets. Mirroring Bruniany’s vivid colors, Jesse sets the dish off with the addition of rare New Caledonian blue prawns with Asian-style ceviche.
