Israeli Food Truck Brings the Holy Land Gulf Side

A new food truck is pulling in and taking up a parking space in the streets of Sarasota. And we’re not mad. Think high-end food—rich in quality as it is culture—but “without all the frills and refinements of fine dining”, says Carl Kolber, Co-owner and Sous Chef of Spice Boys. Partnered with Steven Schmitt, Head Chef, the two college friends aren’t afraid to display their quirky and fun personalities on their brightly colored mobile kitchen. The dynamic duo do note however, that it’s difficult to describe their cuisine in a sentence or two. “God knows we have tried," he says. "It just doesn’t fit into any one category.” So the Spice Boys ultimately came up with “Modern Israeli Cuisine,” with many of the dishes inspired by the likes of Chef Ottolenghi, restaurant Palomar in London, Chef Ori Menashe's Bavel in Los Angeles and more.
Considering the extreme intricacy and processes of many of Kolber and Schmitt’s dishes, the food truck will limit its menu to 3-6 elevated dishes any given day.
Expect off-the-cuff Israeli salvations such as 24-hour sous vide oxtail on flatbread (pictured above), 20-month aged Benontons ham with red eye mayo, housemade pickle and challah bread, eight-hour braised pulled lamb burger, Kofta kebab on pita and tuna tartare with sour cream, tostado and schug (Israeli salsa made with garlic, chili, cilantro and Middle Eastern spices). Vegetarians can look forward to cauliflower "steak" and corn on the cob with butter-mayo and aleppo pepper, while the Chongqing style chicken wings are served crispy and tossed in a secret numbing spice mix. And you didn’t think they forgot about Mediterranean’s favorite spread did you? Be sure to try the homemade hummus flavors—ranging from pepperoncini, spicy corn/tahini/amba (tangy mango pickle sauce) and avocado/peanut-harissa (red chili garlic paste). Wrap up your exotic feast with a corn cookie and a wholesome glass of milk.
