Funky mushrumps are breaking ground all around. Enoki, Chanterelle, Reishi, Cordycep and King Trumpet—these toadstools come chock full of antioxidants and endurance-fueled properties. Having been staples of Eastern medicine for hundreds of years, they’re well overdue to go mainstream in the Western world, now sprouting up in unexpected places like spud-imbued energy bars and cold-brew coffee. Spore or less, fungi is having a moment.
