The Prime Strip comes from Niman Ranch, an all-natural farm where Bijou Café sources the majority of its protein selections. The farm-to-table theme is not going out of style any time soon, so rest assure Bijou’s bringing you the finest tasting meat—raised traditionally, humanely and sustainably. Once in chef’s hands, the tenderized strip gets sautéed to your preferred temperature in zesty spices to create a masterful coating. Most notable are the complex peppercorn flavors—crushed black pepper and other sapid seasonings enliven an ordinary steak to an uppercrust version of itself.
