"We've really learned the difference between making a daiquiri at home in a blender and offering high-quality frozen beverages at high volume"

[The Dish]  Exciting Things On Deck at Daiquiri Deck

Since 1993, Daiquiri Deck has been serving up flavorful frozen cocktails to enthusiastic patrons in the Sarasota area. These delectable slushy concoctions are a favorite with locals and visitors alike, for good reason. Over the last three decades, the team at Daiquiri Deck has put an incredible level of effort into developing not just the recipes for the cocktails, but in innovating the drink-making process itself.

“We’ve really learned the difference between making a daiquiri at home in a blender and offering high-quality frozen beverages at high volume,” says Matt Grover, Daiquiri Deck’s President and co-owner.

A big part of that is understanding the science. With frozen cocktails made in drink machines, it is crucial to hit the correct Brix level, which measures the concentration of dissolved sugars in a liquid. For a frozen cocktail to have the perfect consistency, it needs to have just the right ratio of sugar and alcohol.

“In most of our daiquiris, we’ve eliminated high-fructose corn syrup and they’re sweetened with cane sugar. We’ve gotten really specific and granular with our flavors based on what we’ve learned over the years,” says Grover.

The team at Daiquiri Deck is also constantly innovating when it comes to crafting cocktails. Over the years, they’ve fine-tuned their drink machines at every level, whether that’s making beverage filling safer and more efficient or adding technology that adds for remote operations. In fact, they’ve recently patented many of their processes and are now selling their systems. Daiquiri Deck has also been approached by sports organizations (they already have a successful location at Tropicana Field) and hotels and resorts about frozen drink partnerships. And thanks to all the work they’ve done up to this point, the quality will continue to meet their high standards.

“What’s great about it is that each daiquiri tastes the same as if you were sitting in Siesta Village where it all began,” Grover says.”
