Instantly becoming a fan favorite on the specials menu at First Watch, the Barbacoa Benedict’s shining star, the barbacoa itself, rivals that of the eggs. Marinated in red adobe sauce, this generous portion of barbacoa rests atop a slice of ciabatta bread, rather than the traditional English muffin, enabling the juices dripping from the meat to be soaked up by the porous insides, while the thick crust dispels any leakage on the journey to one’s mouth. Topped with two soft-poached eggs, once that yolk pops, the molten orangey-yellow liquid envelopes the barbacoa, balancing out the spice, leading to deep flavors that leave one craving more. A rich Hollandaise sauce, ripe avocado slices and fresh cilantro top off this dish, as well as a side of house-made pico de gallo and a small salad.
