Florida summers call for more than a quick fix. These five icy cold refreshments, from a Pinecraft retro coffee trailer to a hip Burns Court juice bar, make an occasion of it. Bar Hana goes full tiki with the Hip-Hopanonymous, a communal cocktail of tequila reposado, passionflower liqueur, strawberry saccharum and lime, capped with passionfruit foam, served in a hippo vessel with 2-4 twisty straws for the table. Bar Manager Dillon Murray crafted the drink around the two passions—the liqueur and the foam—playing “their fruity, floral nature” against the bitter liqueur and a sweetened strawberry-ginger syrup. “On weekends, it’s a crowd favorite,” he says. Pair with bao or nori tacos and sip well into the night. The Houston Run Hitch, Kayla Fisher’s Pinecraft coffee-and-matcha trailer, blends a Beach Bod Smoothie inspired by the Hailey Bieber sensation: spinach, pineapple, apple, celery, honey, green juice and strawberry cream, with optional collagen and protein boosters. Fisher grew up visiting her grandparents in this very neighborhood and moved the trailer south from Pennsylvania last year. “My goal is to keep it all fresh and locally sourced,” she says. Sit back on the Hitch’s blush and mint-colored lawn chairs and while away the afternoon. At State Street Eating House, voted best cocktails in Sarasota eight years running, the Paper Plane pairs Elijah Craig Small Batch Bourbon with Aperol, Amaro Nonino and lemon, shaken and served up in a coupe. It’s smoky, citrusy, bittersweet and “one of the best ways to enjoy whiskey in the summer heat,” says operating partner Jason Waganheim. Chill in their lowlit lounge, open seven days a week, with their Napa-inspired late-night snack menu to hand. While Foxtail Coffee might be your regular cold-brew pitstop, the Orange-Rose Lemonade Iced Tea Shaker warrants a considered detour. Chamomile-rose tea steeped with hibiscus, rosehips, orange peel and cranberry gets layered with lemonade and orange bitters, then shaken over ice. Floral and tangy notes play gently with the crisp citrus. “A beautifully layered drink reminiscent of a summer sunset,” describes marketing assistant Mailyn Stiffler. Suitable for “those who don’t want something too sweet,” she says, though “a touch of simple syrup will do the trick” if you do. Refreshing enough for the patio. At Summer Tap Juice Bar, Galina Naguibine’s Burns Court staple, fresh produce arrives in the mornings and everything gets whizzed to order behind an open counter. Sunshine in the Bottle delivers “bright, tropical flavors,” says Naguibine, and a direct Vitamin C hit: pineapple, green apple and orange, cold-pressed with no added sugars. Chase it with a ginger-lemon shot and walk into the afternoon sprightlier than when you walked in.—S. E. Miano
