Summer entertaining lives or dies by the spread. Fortunately, three local charcuterie experts take the work off your hands, turning every board into a bounty. Whether you need it dropped at the dock, delivered to your backyard or cut to order from the counter, these are the three to have on speed dial.
Grazing Goods
Run by former San Francisco event planner Leah Naylor, Grazing Goods builds boards around nitrate-free meats, premium cheeses and organic, local produce “for a more elevated experience.” Her Boating Box addresses a real Florida problem: the small fridge, with a lidded box compact enough to keep cold on the boat or lanai. The 12-inch square is “perfect for six people as a meal, a small crowd for appetizers or just to nibble on over a few days at home,” Naylor says. Expect peppered salami, prosciutto ribbons, blueberry goat cheese, triple-cream brie, 100-day Gouda, manchego and an array of fresh and dried fruits. “I’ve tried to differentiate myself by the quality of the ingredients,” she says, sourcing fresh fruit from Jessica’s Organics and microgreens from Mandy’s. She home-marinates her olives with thyme, lemon and single-source olive oil. As for nitrate-free: “It tastes better; it tastes cleaner.” Small-batch items include her now signature blueberry-lavender jam—born from a surplus of berries after a rained-out event. Gulf Shore Charcuterie
Amanda Blair’s delivery operation now in its fifth year, offers Grazing Boxes (in a range of sizes) as party centerpieces—poolside or at any venue. Blair launched her business with a single Mother’s Day post while working a corporate job and raising two kids. She now caters those corporate events, along with everything from weddings to happy hours. Each setup comes with styling and thematic touches. She drops off, builds the spread; you don’t lift a finger. Blair sources roughly 80 percent of her ingredients from the local Detwiler’s and works every order herself. “I do more than just meat and cheese,” she says, pointing to marinated artichokes, candied jalapeños, honey mustard with pretzel bites and pesto with egg-free naan that holds up at room temperature. She doesn’t recommend leaving any board out for more than an hour, and builds her selections around items that tolerate the heat. A tip for DIY hosts: put caprese skewers on top so “people grab them first and they go quickly.” “You couldn’t go to the grocery store and get all of that for $95 dollars, including delivery,” she says. Artisan Cheese Company
At Artisan Cheese Company, a mainstay farmstead cheese shop in the Rosemary District, owner Louise Converse assembles The Gathering the way a chef approaches a coursed dinner. “It’s a progression,” she says. Soft cheeses on the left, a sweeping arc through bloomy rinds and triple creams, then heartier sheep’s milk and firm Gouda, ending on a blue. “We focus on the placement of the cheese and fill in around that.” At “one of the only cut-to-order cheese shops in Florida,” the counter sources from farms in the U.S. and Europe, and her team of professional cheesemongers curates for each customer. Larger affairs call for bountiful grazing tables; for smaller ones, she’ll lend you a live-edged walnut board, handmade by her husband, to return the next day. Heading to the beach calls for one of the company’s boxes—“a lovely adventure in cheese”—compact enough for two. Summer also brings pairing classes—Cheese & Beer, Cheese & Wine—discounted for year-rounders. “What does summer look like, and how does that affect the seasonality of cheese?” Converse asks.
