Cheeky, politically incorrect, occasionally vegan and often brilliant. No, I’m not describing the coed that you used to be or the one that you used to be in love with – I’m describing the new Fall Menu at Louies Modern, as imagined and implemented by Executive Chef Francis Casciato and his merry band of knaves with knives. From Porcini Doughnuts with moody blue cheese to a Foie Gras Terrine to a Vegan Bouillabaisse, there’s something for everyone on this Mad Hatter’s tea party menu and it’s all excellent, even the airline chicken. Wait, airline chicken at Louies Modern? Well…sort of. Anthony Bourdain’s Honey-Agave Chicken with double beet spaetzle, baby kale, citrus, and goat cheese is Chef Fran’s answer to a personal memory in which he overheard Anthony Bourdain exclaim to Iggy Pop “Why can’t I just get some $@*#%$ chicken?”. The chicken is as succulent and flavorful as its namesake would demand and the hash of bright and earthy vegetables held together with dollops of goat cheese is a smart and sexy accompaniment.
