Who says seafood must be served separate from your salad? Phillippi Creek Village Restaurant & Oyster Bar shares this dish and a house dressing for you to try at home.
Calypso Salmon Salad
Ingredients: Tomatoes; cucumber; green beans; chick peas; sweet plantains; organic mixed greens; salmon fillets; Calypso Orange Dressing; Calypso Orange Glaze
Chop all salad ingredients and set aside. Pan-sear salmon in a heavy skillet and brush on Calypso Orange Glaze while cooking. Toss salad ingredients with Calypso Orange Dressing and top with salmon.
Ingredients (for Calypso Orange Dressing): ½ cup red wine vinegar; ½ cup mayonnaise; ½ cup Dijon mustard; 2 Tbsp. basil, chopped; ½ tsp. sea salt; ¼ cup water
Blend all ingredients together thoroughly.
Ingredients (for Calypso Orange Glaze): 4 cups freshly squeezed Orange Juice; ½ cup Brown sugar; ½ tsp. sea salt; ¼ cup soy sauce; 2 Tbsp. cilantro, chopped.
Mix together in sauce pan over medium heat for approximately 40 minutes or until glaze consistency.
