Not quite breakfast, not quite lunch—the Huevos Gringos straddles the precarious line between an eggfull brekkie and a stuffed lunch burrito, and quite possibly could quench a dinner hankerin'. Station 400's deconstructed Mexican mouthful brings together the best of chilaquiles, breakfast burritos and huevos rancheros, creating a masterful mash up not soon forgotten. Two eggs any style (go poached or go home) roost atop sliced avocado and a bed of chopped and pulled chipotle chicken, the creamy orbs just begging for a light poke to set free the golden yolk. Refried black beans provide the base for the two crispy circular tortillas under the chicken, with green slivers of pickled jalapeno peppers and dollops of smoky spicy aioli surrounding the Latin-inspired mountain. Go forth and get messy.
